Francois Giboin Cognac
Based in the highly sought-after Borderies terroir, Cognac François Giboin is both a producer and vinegrower; he does not outsource his grapes, but instead picks grapes from his own vines for his very own Cognac. With properties in both the Borderies and Fins Bois, he is the sixth generation producer on his 13.5 property in the Borderies. Approximately 11.5 hectares of land are used for growing Ugni Blanc grapes, and the rest for Pineau. Using traditional methods passed down over generations, he distills over lees in a copper pot still and ages his Cognacs in his partially-underground cellar in the Borderies. The clay-rich, gypsum soil provides the perfect humidity and year-round temperature.
