Our visit brought us to the quiet commune of Brie-sous-Matha, home to the Denechere family and their estate, Clos de la Groie. The family farms an impressive 80 hectares of vines, all rooted in the typical Fins Bois clay-limestone soils and situated within a tight 20-kilometer radius of the domaine, all in this more northerly sector of the cru. There is a sense of grounded tranquility here, an immediate understanding that this is a working farm, vineyard, and distillation operation where the land and the family dictate the character of what ends up in the glass.

The Denechere family's roots in the region run deep. They are currently on their fifth generation of tending vines and distilling eaux-de-vie. Yet, for most of their history, their eaux-de-vie and young Cognac were sold off to longstanding negociant partners. It wasn't until 1997 that the family made the decision to step out of the shadows and begin bottling their own Cognac under the Clos de la Groie name.

In the Distillery

In the distillery, Sebastien Denechere walked us through their production philosophy alongside their two traditional 25-hectolitre alambics. Because they still dedicate a portion of their production to contract distilling for larger houses, they distill both with and without the lees. Sebastien explained the strict demands of their clients: Martell, for instance, requires wine distilled with zero lees, while Courvoisier prefers the richer rounder profile that comes from distilling with the “fine lees.” As Sebastien noted, the quality and volume of the lees can vary significantly from one harvest to the next, meaning the distillation process is never just a simple recipe to follow; it requires intuition and a constant reading of the vintage.

For their own Clos de la Groie production, however, they prefer to distill with the lees, which benefits eaux-de-vie which are destined for long aging — as most of their Cognacs are.

In the Chai

Moving into the chai, the air shifted. The main cellar where their barrels rest is mostly dry, though they maintain other cellars with higher humidity levels to slowly shape the maturation process. Sebastien favors wide-grain wood from trusted cooperages like Navarre, Vicard, and Doreau, usually sticking to a medium chauffe (toast) for their own range to let the Fins Bois fruit shine. That being said, they have wide grain barrels with many different types of chauffes in the chai. Once the spirit is in the wood, their approach to reducing the alcohol is patient and meticulous. It is detailed just below.

What is Clos de la Groie?

Clos de la Groie is a fifth-generation family estate in Brie-sous-Matha, in the Fins Bois cru of Charente, France. The Denechere family has farmed these clay-limestone soils for generations, supplying eaux-de-vie to the major houses before beginning to bottle under their own name in 1997. Today, the estate is run by Sebastien Denechere, producing a focused range of Cognacs defined by exceptional age, a patient multi-step reduction philosophy, and genuine terroir character.

What is Fins Bois Cognac?

Fins Bois is the largest of the six official Cognac crus, encircling the more celebrated Grande and Petite Champagne zones. Its clay-limestone soils — known locally as terres de groies — produce Cognacs prized for roundness, fruit, and relatively rapid development. Estates like Clos de la Groie, working in the more northerly sector of the cru, pair this natural suppleness with exceptionally long aging to produce Cognacs of remarkable depth and elegance.

What is the Vieille Reserve Cuvee de Papy Franck?

The Vieille Reserve Cuvee de Papy Franck is a Fins Bois Lot 47 distilled in 1947. It was secretly set aside by Sebastien Denechere’s grandfather to mark the birth year of his son. The family had no idea the barrel existed until after the grandfather’s passing — it was found hidden in an obscure corner of the chai. The precious liquid was transferred into glass dame-jeannes at the turn of the century to halt aging, and eventually bottled as a family tribute. It is among the oldest and most historically significant Cognacs we have ever had the privilege to offer.

Starting at 70% ABV after distillation, they perform an initial reduction to 65% after one year, then reduce by approximately 5% every 3-4 years. Once the spirit reaches 50-55%, manual reductions stop and the Angels' Share takes over for a period of quiet maturation lasting decades for their XO (30 years) and Sublime (35 years). A final reduction is made one year before bottling, after which the Cognac rests for twelve months. This patient approach preserves the elegance and terroir character of the Fins Bois spirit.

Understanding the Reduction Journey

As shown in the graph, the process begins immediately after distillation at 70% alcohol by volume. Unlike mass-produced spirits that may be reduced quickly, the Denechere family follows a strictly disciplined timeline:

  • The Initial Step: Exactly one year after the spirit is barreled, they perform the first reduction, bringing it down to 65%.
  • Incremental Graduation: Over the next decade, the spirit is reduced by 5% every 3 to 4 years. This slow integration of water allows the wood and the eau-de-vie to marry without “shocking” the delicate aromas of the Fins Bois spirit.
  • The Marrying Period: Once the Cognac reaches the 50-55% range, the manual reductions stop. For the XO and Sublime, this results in a long period of quiet maturation where the “Angels’ Share” (natural evaporation) does the work, slowly softening the spirit and bringing down its alcohol level.
  • The Final Polish: One year before bottling (at around year 14 for the VSOP or year 29 for the XO), a final reduction is made to reach the bottling strength. The Cognac then rests in its final state for twelve months to ensure absolute harmony.

This meticulous approach ensures that even their oldest Cognacs, like the 35-year-old Sublime, retain their elegance and terroir-driven character rather than becoming overwhelmed by high alcohol or heavy wood tannins.

The Range

That careful aging strategy is evident in their lineup. Today, the estate produces four distinct Pineau des Charentes and a tightly focused range of five Cognacs. What immediately stood out to us was the exceptional ages on their core range, far exceeding standard minimums. Their "entry-level" VS boasts 5 years of age, while the VSOP sits at an impressive 15 years. Moving up the tier, their XO contains eaux-de-vie aged between 25 and 30 years, and the Sublime pushes that envelope even further to 30 to 35 years of maturation. But there's still one more...

Papy Franck's Secret

The absolute highlight of our visit was tasting a piece of literal family history: the Vieille Reserve Cuvée de Papy Franck. This Fins Bois Lot 47 (distilled in the landmark year of 1947) comes with an incredible backstory. Sebastien's grandfather had secretly set aside a single barrel to commemorate the birth year of his son — Sebastien's father. For decades, the family had no idea this barrel even existed. It wasn't until the grandfather passed away and the family was clearing out some of his stashed belongings that they discovered the hidden cask tucked away in an obscure, forgotten corner behind the main chai. In a beautiful tribute, the family transferred the precious liquid into glass dame-jeannes at the turn of the century to halt the aging process, eventually bottling it in his honor.
