Our recent meandering through the Grande Champagne led us to Juillac-le-Coq, home to Domaine de la Pouyade and the renowned family-run house of Cognac Jean Fillioux. The domaine is no stranger to us; we have long enjoyed its Cognacs and have always considered the house to be among the very elite producers. But only recently have we gone in for a proper visit to see, smell, hear, and experience everything firsthand.
Perched on a gently sloping hillside, this domain is at once steeped in heritage and tradition but keenly moving forward with ambition and a youthful verve. While we expected greatness from one of the legendary names in Cognac’s “Golden Triangle,” the reality during our visit exceeded all expectations. Below, we share the highlights of our visit—from family history and vineyard philosophies to the distinctive Cognacs that showcase their unique position in Cognac Grande Champagne cru.
Any conversation about Cognac Jean Fillioux inevitably begins with the family’s multi-generational story. Though the house’s roots reach back to 1880, it was in 1894 that Honoré Fillioux acquired the Domaine de la Pouyade, which perches on a gently-sloping hillside overlooking Juillac-le-Coq. Over time, each generation contributed new ideas while safeguarding the traditions that have made their Grande Champagne Cognac production famous.
Honoré Fillioux initially co-owned a distillery near Gémozac (out on the west side of the Cognac region, almost reaching the coast) but soon established his own house—distilling, blending, and transporting eaux-de-vie under his name. His decision to purchase La Pouyade laid the foundation for everything that followed. Honoré’s son, Jean, expanded the family reputation beyond France and into international markets, bottling and exporting to Europe and the United States. Stocking older eaux-de-vie - something of a speciality for the house - he anticipated the global passion and demand for high-quality Cognacs.
Fast-forward through Michel and Pascal Fillioux’s era, and you arrive at the present day. In 2015, Pascal’s son Christophe took the reins, aided by his wife Virginie (an enologist by training). Together, they are writing the next chapter, a chapter that respects centuries of know-how while embracing fresh approaches to ensure the house’s future vitality.
Standing proudly at the top of their vineyard and estate, the entire Fillioux family demonstrates a commitment to excellence. The motto written under the little rooster on the labels “Haut juché, juche le plus haut” (loosely translated as “Aim high and look farther”) defines the lineage perfectly, reflecting both forward-thinking and respect for the land.

The Domaine
The Grande Champagne sits at the pinnacle of Cognac’s crus, famous for producing particularly elegant, finely structured eaux-de-vie with an aptitude for long aging. Domaine de la Pouyade covers approximately 25 hectares, with plans to expand to 28. A single 15-hectare parcel unfurls right behind the family home, perched on a slope offering prime sun exposure.
The Golden Triangle: Within Grande Champagne, certain villages (like Juillac-le-Coq, Angeac-Champagne, Verrières) have historically enjoyed high acclaim. This triangular stretch of land between these three towns has been called the Golden Triangle. Rich in chalky limestone, these slopes have been sought after by négociants for generations. Much of Juillac-le-Coq features shallow clay-limestone soils over a Cretaceous-era limestone bedrock that can be up to 200 meters thick. Vine roots can plunge deeply—up to 25 meters—finding the moisture they need. This characteristic high acidity in the grapes, essential for quality Cognac distillation, is a direct outcome of the chalky terroir.
As Christophe’s mother, Monique Fillioux, explains:
The ‘Golden Triangle’ is no exception to this rule. The villages of Angeac-Champagne, Juillac-Le-Coq, Verrières and Ambleville lie on a line of low-lying hills, between 50 and 120 meters. Since time immemorial, eaux-de-vie from these slopes have been particularly sought-after by the wine trade. The subsoil also contributes to the exceptional quality of these eaux-de-vie. The subsoil of Campanian limestone, up to 200 meters thick.
These flakes of friable limestone enable the vine roots to penetrate deeply and fetch the water they need for ideal development. This limestone acts as a sponge. It stores water in winter and releases it in hot, dry summers. As the most calcareous area of Grande Champagne, the “golden triangle” benefits and is unique in the entire region. It's the combination of these two elements - hillsides and very chalky soil - that makes the eaux-de-vie from this part of the Grande Champagne region are particularly fine, aromatic and suitable for very long aging.
Though the domaine is not organically certified, the Fillioux family is adamant about sustainable viticulture. In fact, the domaine recently was certified Haute Valeur Environmental Level 3 (HVE3), which demonstrates this commitment to the land they work on. They apply the bare minimum of treatments, closely monitoring disease pressure—particularly from mildew (mildiou). By using natural ground cover between vine rows and applying a system of “sexual confusion” to control grape pests, they reduce the need for chemical solutions.
Adding to the biodiversity are hedgerows, fruit trees, and even truffle oaks dotted around the property. On any given day, you may spot birds of all sorts, rabbits, and even bats, a sign of the estate’s balance with the natural world. The Fillioux family, and everyone who works at the state aims to reach a certain harmony with nature and the animal life around the domaine. As a fun anecdote, it was explained to us that during the entire spring and summer seasons, a window in the chai is purposely left open for the migrating swallows to come and go as they please.
Additionally, they have constructed small nesting spaces around the domaine for these travelling swallows to take up as their nesting site. Moreover, the well-chosen hillside sites are relatively spared from frost and hail, weather events that can devastate other parts of the region.
In a departure from many Cognac producers we’ve met, Domaine Jean Fillioux does not distill on-site. Instead, they have maintained a decades-long relationship with the Distillerie Rémy Piron just a short distance away in Angeac-Champagne. In fact, Distillerie Remy Piron originally belonged to the cousins of the Fillioux family, so they are not just providing a distillation service; the relationship and the work together stretches back for more than 80 years. Christophe Fillioux stays intimately involved with the entire process, ensuring that key decisions align with the house’s stylistic goals. The house favors distillation with the lees. .
The Chai
The estate’s cellar spaces make use of both dry and humid conditions:
Dry Cellars are located on the top floors of the chai. The environment here is less humid and is where young Cognacs often start out in new oak. That is, the domaine’s new oak barrels tend to be placed in the dry cellars. The dryness, coupled with medium to medium+ toasting on the barrels, allows the spirits to absorb oak nuances more actively in their early years.
The lower floors maintain notably higher humidity. Older Cognacs are transferred here to mature in older, well-seasoned barrels (or “roux” casks) after spending two to three years in new oak. The moist environment slows evaporation (the “angels’ share”), helping the Cognacs develop softness, richness, and more complex, aged flavors over time.
Oak Choices & Toast Levels
Another interesting detail at Jean Fillioux is their choice to work with ten different coopers. Limousin oak constitutes the majority, while a smaller percentage comes from forests like Tronçais. Each tonnellerie brings its own style, offering varied grains and toasting levels. The Fillioux preference is a 350-liter barrel, typically with a medium to medium+ toast, delivering subtle oak impact and a broad palette of aromas.
No single strict recipe governs how long a spirit remains in new oak versus older barrels, but as a general rule:
Jean Fillioux offers a wide range, each reflecting the family’s quest for elegance, depth, and the inherent finesse of Grande Champagne. We must admit; these Cognacs have that special something, something that is definitely tangible but difficult to put words on. Without a doubt they showcase everything that makes the Grande Champagne so special, but they have a drinkability, a mouthfeel, a breadth of aromas, and a surprisingly little amount of overlap despite being quite a large and complete range. In short, we’ve always known the house’s Cognacs were among the top tier in the region, but this visit and tasting cemented that fact.
Pascal Fillioux, Christophe's father states:
One of our objectives when producing Cognac is to have a nice attack upon entry, a complex mid-palate, and a long-lasting finish all the way from VSOP up to our oldest qualities.

To my taste this Cognac delivers notes of dried apricot, peaches,orange zest.,nuts, dark chocolate, maple syrup, cinnamon, cedarwood, rancio, tobacco, a lot of oak and I think black tea..i find it extremely drinkable smooth a kind of juice.. Perfect for after a good dinner with a fine cuban cigar!
Tasted from a sample of the Advent Calendar: Beautiful amber colour with golden highlights. Fine nose with dried orange peels and ripe, sweet oranges. On the palate quite a lot of spices, dried bitter-oranges with the full body of well integrated alcohol of 44%. Long spicy finish. Fine XO Cognac...
Jean Fillioux offers some of the most elegant and harmonic cognacs available today. This cognac was launched not so long ago and has gotten very little attention. I wonder why. This is a beautiful cognac, a bit reserved on the nose, but you find some very nice citrus tones and hints of dried fruit....
Palate: A plethora of flavour including notes of dried apricot, peaches, elderflower, nuts, dark chocolate, maple syrup, cinnamon, cedarwood, rancio, tobacco smoke, rich oak and black tea.
I had a few bottles of Jean Fillioux Réserve Familiale back in 2008, and had chance to compare it against Hine, Courvoisier XO, as well as Door millesime and some fine Bas Armagnac brands, below $300 for bottle. Jean Fillioux Réserve Familiale was outstanding in all parameters, nose, test, mouth...
Nose: Lively in spite of its old age. Creamy and appetizing, offering some notes of dried and jammy fruit, with a solid foundation of rancio, leather and cigar boxes.
Palate: Full-bodied, bursting with toasted chocolate, liquorice and toffee. The finish seems neverending, gently rounded with Christmas spices and a drizzle of honey.

From the moment you step onto the property at Domaine de la Pouyade, the sense of heritage is palpable: vines - many of which are old vines - rooted in chalky soils, dry and humid cellars on two levels in which new and old barrels rest patiently, and a complete and coherent range of immensely drinkable complex Cognacs that showcase the very best of the Grande Champagne - and the very best of this storied family’s Cognac know how.
Guiding the estate today, Christophe and Virginie Fillioux blend tradition and careful innovation in equal measure. They have no intention of abandoning time-tested savoir-faire; rather, they refine year by year ensuring their Cognacs remain among the most prized in the region.
